Simple meals are often the best meals. After watching the movie “Julie and Julia” with my kids, they wanted to try poached eggs. They would have liked to try other dishes made in the movie but eggs were the most feasible.
My blog entry under technique for poached eggs is foolproof and I recommend it for achieving the perfect poached egg. Both my kids joined in and made creative toppings for the eggs. Grilled tomatoes, oregano, chopped chives, sauteed zucchini and bell peppers, and a dash of olive oil were a few of the toppings we tried. All of them were good.
My daughter liked the yolk; she hasn’t eaten egg yolks for years. My son whose cholesterol I need to watch also liked the yolk which is not a good thing. Next time we eat this for dinner there must be something filling accompanied with it, otherwise he can easily eat 5-6 eggs.
Overall it was a memorable meal…cooking and eating with your kids is one of life’s greatest pleasures.
